May Foodie Pen Pal Reveal!

This was my first month with Foodie Pen Pals and I was so excited.  My package came from Michele Theresa near Atlanta, Georgia.  I felt like a kid at Christmas every day coming home to look at my front door to see if I had a package and when it finally came I couldn’t get it open fast enough!  My oh my what an eclectic mix of food!  I got a lot of tea, from common yogi herbal tea to instant Chinese tea.  I can’t wait to try them.  
I got a recipe for “Pepperpot” which calls for pig trotters or cow’s heels and ox tails.  I have to admit I have never eaten any of those 3 items, nor would I know where to purchase them for this recipe!  The recipe also called for Cassareep sauce which was included in my box as well.  This sauce can also be used in fried rice, chow mein and BBQ to add flavor and color.  I wonder if it will be good in quinoa?  
My box also included a box of corn and yuca starch which can be used to make fritters as well as prepared flour for crepes.  I have never made either of these items so now that I have the main ingredient I need to find a yummy recipe to make them!
I was excited to get authentic ramen noodles as well.  I couldn’t read the instructions because, well, they really are authentic!  I got 2 packages, one beef and one shrimp.  I ate the beef one and it is definitely tasty and much better than your regular store-bought Top Ramen!  Yum!
So my first experience with Foodie Pen Pals was awesome!  I am already looking forward to next month as well as making new dishes with the food I received.  Thanks again Michele!

Checking in...

Hello all!  I know it has been forever since I've checked in, but as for me and the non-cancer world there isn't anything to report!  THANK GOODNESS!!  I'm still healthy as can be.  I do have an upcoming scan in August, but until then I just keep living life.

I haven't been ignoring my blog, but I guess I can say I've been ignoring posts.  I really just have been focused on my Facebook page I have created.  You can still view it even if you don't have a Facebook account.  If you use Twitter you can find me tweets my posts from there as well.  SILLEE10.  Here is the link to my Facebook page too so PLEASE check it out.  I post sooooo many things there.  Share it with friends too, it's for EVERYONE!

I am still doing what I do.  Still working out, running, yoga, etc.  I'm still eating healthy and clean.  I recently joined a program called Foodie PenPals and I'm sending out my first package tomorrow!  You can find out more about it here.  You get matched with someone else and send them a box of goodies each month!  It looks like fun and I can't wait to see what I get!

I have to admit that I finally don't think about cancer everyday.  I no longer freak out about everything. Is that good or bad?  I don't know.  It will always be a monkey on my back, but now that time has passed and I've kicked it to the curb, every day I feel better and better and worry about it less and less.  Does this make sense?  It actually feels like something that happened to me forever ago.  It feels like a blur.  At times it also feels like a dream, er nightmare.  Regardless, I am happy that I can live my life without worrying about it every second of the day.  For that I am grateful.

I have also been in talks with a producer for a documentary on a local cable station.  He wants me to tell my story.  He wants to get into people's heads that it's OK to talk about it.  It can be beaten.  It's not necessarily the end of the world.  I will keep you updated as I know more!

My birthday is soon coming up (#34).   I am also hitting some exciting anniversaries too with my journey.  Almost 2 years in remission.  2 years of hair growth.  2 years of completing chemo.  I like 2 years.  I can't wait for 3, 4, 5, 6 and many many more.
