Another day is coming to an end and it was my 3rd day of being a vegan! It really hasn't been that bad, but I sure miss the ability to eat whatever I want...within reason of course. Like to just be able to pop a little treat into my mouth or maybe have a chip or a piece of cheese?? Ahh....11 more days. I can do it!
I had another busy day of shift today and my energy still held up. I stayed up a little late last night to watch the girls dominate and win the GOLD in gymnastics and I still felt energized. Maybe this no coffee thing is having a positive effect on me?! Maybe I won't start drinking it again when I finish this. I guess we shall see.
Here's what I ate today (it's starting to get boring I'm sure because it's the same thing over and over again....)
Breakfast: smoothie (1 scoop OptiCleanse GHI vanilla protein powder with 1 cup organic raw spinach, 1/2 cup organic berries and 1 scoop of Xmogen's Organix Phytofood.
Lunch: Quinoa pasta with homemade pesto sauce, cucumbers, jicama and onions and 1 scoop OptiCleanse GHI vanilla protein powder mixed with water).
Snack: 1 peach
Dinner: Lentil, spinach and sweet potato soup and 1 nectarine.
Snack: 1 brown rice cake w/ 1 tbsp almond butter and a little drizzle of honey
Before bed: 1 scoop OptiCleanse GHI vanilla protein powder mixed with water.
Total calories: 1354 (Carbs 54%, Protein 24%, Fat 22%). Although my carbs are high, they are all healthy carbs. I got 80 grams of protein in today so I'm pleased with that number and my fat is under 30% so I'm pleased with that number. I felt satiated all day too so that's good. I was starving at lunch, but it's only because my lunch was delayed because I was so busy.
On to tomorrow and back to working out!
